Irish Boxty

Quick, simple, and super filling, this Irish boxty recipe is delicious. Made with both raw and leftover mashed potatoes, the resulting sweet and savory umami flavor is accompanied by a satisfying crunch and chewiness. Make sure to try it with another Irish recipe, the Irish champ!

Servings: 14 boxty (~3” diameter)


Ingredients

  • 200 g grated raw potato

  • 200 g leftover mashed potatoes (you can also use champ)

  • 240 g of all-purpose flour

  • 2 ½ cups of whole milk

  • 7 g salt

  • Ground white pepper

  • Butter (for frying)

Steps

  1. Grate the raw potato. Put the grated potato in a cloth, and then squeeze as much liquid out of the potatoes as possible. 

  2. In a large bowl, combine the drained grated potato, mashed potato, APF, salt, and white pepper. Lightly mix to combine. Slowly pour in about half the milk, and whisk to combine. Add more milk as needed. The mixture should be a thick batter, but still pourable. (I used about 1½ cups) Let the batter rest for 30 minutes.

  3. Heat a non-stick pan or skillet over medium heat. 

  4. Once heated, take ½ Tbsp of butter and place it in the pan where you will be frying your boxty. As it melts, pour a ¼ cup scoop of the batter on top of where you placed the butter. Let sit and cook for 2 minutes (bottom should be golden brown).

  5. Once the boxty is golden brown, flip to cook the other side. Let cook for another 2-3 minutes (try not to move the boxty much immediately after flipping as the wet batter will need time to set)

  6. After cooking time, you can flip the boxty a couple times to see if both sides have reached the desired golden brown color. Remove and set on a plate.

  7. Repeat the above frying steps for the rest of the boxty batter (steps 4-6)

  8. Serve with any desired toppings or sides. Alternatively, set aside and reheat for serving the next day.

To reheat:

  1. Heat a non-stick pan or skillet over medium-low heat. 

  2. Once heated, place your cooked boxty in the pan and move around. Allow to heat for 2 minutes. Then flip, and heat for another 2 minutes.

  3. Top with your favorite toppings and serve while hot!
