Quick, easy, filling, and delicious. Whether it is a weeknight or the side to a feast, these potatoes are my favorite to whip up! These mashed potatoes use butter, whole milk, and a raw egg to give them a silky, creamy texture that will rival grandma’s home recipe. Plus, the use of green onions / scallions in this dish make it bright and refreshing, even on their third or forth bowl. Don’t judge me!

Ingredients

  • 2 lbs potatoes, peeled and quartered

  • 1 cup milk

  • 4-5 stalks of green onions, thinly sliced

  • 4 Tbsp butter 

  • 1 egg

  • salt, to taste

  • freshly ground white pepper, to taste

Steps

  1. Add your potatoes into a large pot. Add enough water so that the potatoes are covered. Bring the potatoes to a boil. Once boiling, add salt to potatoes and cook for about 20 minutes, until the potatoes are tender.

  2. Once your potatoes are cooked, drain the water out of the pot. Dry out the potatoes on low heat for 2 minutes.

  3. In the meantime, combine the milk, butter, and green onions in a small saucepan and heat over medium-low heat until simmering. Let simmer for 1-2 minutes.

  4. Add in the warmed milk, butter, and green onions mixture to the potatoes a little at a time, mashing and stirring constantly to incorporate.

  5. After about 4-5 minutes of mashing, add an egg to the mixture and stir well to incorporate.

  6. Season with salt and white pepper to taste. 

  7. Serve with 1-2 tablespoons of extra butter for self-serve mixing.
