One-Pan Mac and Beer Cheese

Prep time: 5 minutes (to grate cheese)

Total time: 15 minutes

Servings: 4


Ingredients

  • 2 cups cheddar cheese (shredded)

  • 2 Tbsp butter

  • 1 shallot (chopped)

  • 3 cloves garlic (chopped)

  • 8 oz macaroni

  • ½ cup stock

  • 1 11.2oz bottle of Guinness (or other dark beer)

  • 1 tsp dijon mustard

  • 1 Tbsp Worcestershire sauce

  • 1 tsp paprika

  • 2 Tbsp heavy cream

  • Parmesan cheese (to taste)

Steps

  1. Add butter to pan over high heat

  2. Once butter melts down, add shallots to pan. Stir and cook for 1.5 minutes

  3. Add in garlic and stir for about 30 seconds

  4. Add in macaroni and stir until pasta is shiny and coated.

  5. Once pasta is warmed up, add stock. Once the stock is poured in, add the bottle of Guinness

  6. Cook pasta in beer and stock combination until Al Dente, around 6-7 minutes. If needed, add a little bit more stock

  7. Add mustard and Worcestershire sauce to the pan and mix in

  8. Add paprika to the pan and stir

  9. Add half the cheese into the pan and stir to incorporate

  10. Turn off the heat and add the rest of the cheese. Stir until fully incorporated and emulsified

  11. Add the heavy cream and stir

  12. Serve, garnishing with toppings as desired.
