Twice-Baked Cockatrice Wings

Now that you've downed the dreaded beast, hopefully none of your companions turned to stone, it is time to feast! Who knew that baking powder made it so crispy? (If your party wasn’t quite able to take down a cockatrice, a suitable substitute is the chicken wing.)

Active time: 5 minutes | Inactive time: 1 hr 30 mins
Total time: 1 hr 40 minutes
Servings: makes about 48 wings
Ingredients
3 ½ lbs chicken wings
1 Tbsp baking powder
1 ½ tsp black pepper (ground, optionally toasted)
1 ½ tsp salt
1 Tbsp paprika
1 tsp onion powder
1 tsp garlic powder
1 tsp ginger powder
½ tsp mustard powder
Steps
Preheat your oven to 300°
(Optional) Heat up your black peppercorns in a pan, then grind
Mix the baking powder into the chicken wings, making sure to incorporate well.
Add the salt and black pepper and mix until thoroughly coated.
Place the wings skin side up on a rack set on top of a baking sheet.
Put the wings in the oven for 40 minutes.
Raise the temperature of the oven to 425°, then let cook for another 40 minutes.
While waiting, combine the paprika, onion powder, garlic powder, ginger powder, and mustard powder into a bowl. Set aside.
After 40 minutes, remove the wings from the oven (but leave the oven on!). Carefully move the wings into a large bowl and add your seasoning mixture. Mix thoroughly until coated.
Place the wings back onto the baking rack and put back in the oven for 10 minutes at 425°
Remove and serve immediately
