Date & Pistachio Fruit Balls

Inspired by Quith-Pa from Heroes’ Feast, the official D&D Cookbook!

These fruit balls have a wonderful balance of flavors. The sweetness of the dates is cut by the earthy pistachios, and the almond extract and lemon combination only serve to heighten all the flavors. It’s a tasty little morsel, and vegan to boot!

Total time: 1 hr

Servings: makes between 12-16 balls


Ingredients

  • 1 tsp Lemon zest

  • 1 ½ Tbsp Lemon juice 

  • 6 oz dried dates 

  • 51 g of crushed pistachios

  • ¾ tsp of almond extract 

  • Healthy pinch of salt

Steps

  1. Combine 17g of crushed pistachios and all other ingredients into a food processor. Pulse until very finely chopped.

  2. Put the remainder of the pistachios into a plate/flat surface.

  3. Pull the mixture out of the food processor and into a bowl. 

  4. Using a tablespoon, measure out a scant (unpacked) tablespoon of the mixture. Roll it into a ball in your hands.

  5. Once the mixture is a ball, roll it in the pistachios to create a light coating.

  6. Set aside. Repeat for the rest of the mixture until you run out.

  7. Let sit to dry and firm up for 45 minutes.

  8. Enjoy!
