Date & Pistachio Fruit Balls

These fruit balls have a wonderful balance of flavors. The sweetness of the dates is cut by the earthy pistachios, and the almond extract and lemon combination only serve to heighten all the flavors. It’s a tasty little morsel, and vegan to boot!

Servings: makes between 12-16 balls
Ingredients
1 tsp Lemon zest
1 ½ Tbsp Lemon juice
6 oz dried dates
51 g of crushed pistachios
¾ tsp of almond extract
Healthy pinch of salt
Steps
Combine 17g of crushed pistachios and all other ingredients into a food processor. Pulse until very finely chopped.
Put the remainder of the pistachios into a plate/flat surface.
Pull the mixture out of the food processor and into a bowl.
Using a tablespoon, measure out a scant (unpacked) tablespoon of the mixture. Roll it into a ball in your hands.
Once the mixture is a ball, roll it in the pistachios to create a light coating.
Set aside. Repeat for the rest of the mixture until you run out.
Let sit to dry and firm up for 45 minutes.
