Pineapple & Hazelnut Fruit Balls

These fruit balls will explode in a blast of tropical flavors in your mouth. The combination of grapefruit, pineapple, and grenadine is reminiscent of a nice cocktail on a beach, while the hazelnut adds a wonderful crunch to the otherwise soft fruit ball. It’s a tasty little morsel, and vegan to boot!

Servings: makes between 12-16 balls
Ingredients
1 ½ tsp grapefruit zest
1 ½ Tbsp grapefruit juice
6 oz dried pineapple
51 g of crushed hazelnuts
¾ tsp of grenadine
Healthy pinch of salt
Steps
Combine 17g of crushed hazelnuts and all other ingredients into a food processor. Pulse until very finely chopped.
Put the remainder of the hazelnuts into a plate/flat surface.
Pull the mixture out of the food processor and into a bowl.
Using a tablespoon, measure out a scant (unpacked) tablespoon of the mixture. Roll it into a ball in your hands.
Once the mixture is a ball, roll it in the hazelnuts to create a light coating.
Set aside. Repeat for the rest of the mixture until you run out.
Put the balls in the fridge to dry and firm up for 45 minutes. (Optionally, if you prefer a tougher ball, you can place it in the freezer as well)
