Date & Chocolate Energy Balls

Containing the same amount of caffeine as 1/5 a cup of coffee, these energy balls are a blast of deliciously rich and earthy flavors. Orange makes a subtle appearance to brighten up the nutty, dark richness of this tasty, vegan snack.

Servings: makes between 12-16 balls
Ingredients
1 ½ tsp orange zest
1 ½ Tbsp orange juice
6 oz dried dates
2 tsp cocoa powder
30 g roughly ground coffee beans
3 Tbsp peanut butter
Healthy pinch of salt
Steps
Combine 8g of roughly ground coffee beans and all other ingredients into a food processor. Pulse until very finely chopped.
Put the remainder of the coffee beans into a plate/flat surface.
Pull the mixture out of the food processor and into a bowl.
Using a tablespoon, measure out a scant (unpacked) tablespoon of the mixture. Roll it into a ball in your hands.
Once the mixture is a ball, roll it in the coffee beans to create a light coating.
Set aside. Repeat for the rest of the mixture until you run out.
Sprinkle a little bit of salt over the balls. You may have to press lightly to make sure that the salt adheres to the balls.
Put the balls in the fridge to dry and firm up for 45 minutes.
