Four Cheese Skillet Au Gratin

Potatoes, 4 cheeses, and a single skillet. Add in an oven and you’ve got yourself a deliciously cheesy, skillet potatoes au gratin with a cheese crust that’s bursting with savory flavor.

Ingredients

  • 1 lb Gold Yukon potatoes (thinly sliced)

  • 2 Tbsp butter

  • 1 shallot (finely diced)

  • 1 serrano pepper (finely diced)

  • 4 cloves of garlic (minced)

  • 2 oz of feta cheese (finely grated)

  • 2 oz of fontina cheese (finely grated)

  • 2 oz of cheddar cheese (finely grated)

  • Parmesan cheese (to taste)

  • Black pepper (to taste)

  • Chives (chopped, for garnish)

Directions

  1. Preheat your oven to 400

  2. Heat cast iron skillet on medium heat

  3. Add butter to your heated skillet

  4. When butter melts, add in the shallot and stir. Let cook for 30 seconds.

  5. Add serrano pepper, a bit of salt, and the garlic. Stir and let cook for 30 seconds.

  6. Turn off the heat and remove the mix from the pan

  7. Layer the sliced potatoes in the pan, starting with the center and spiraling outwards until the bottom of the pan is fully covered.

  8. Spread the shallots, pepper, and garlic mixture onto the potatoes

  9. Spread the shredded cheese on top of the potatoes, trying to cover the full layer

  10. Use the leftover potatoes to create another layer of potatoes , and then cover with remaining cheese

  11. Shred some parmesan on top to taste

  12. Top with some black pepper to taste (if desired)

  13. Put skillet in oven heated to 400 degrees for 25 minutes

  14. After 25 minutes, make sure your skillet as at the highest rack in the oven, and cook under the broiler for 2 minutes

  15. Remove from oven and let cool for 3-5 minutes

  16. Slice, garnish with chives (if desired), then serve!
