Pizza Sauce
This pizza sauce is a blast of umami. Whether using it on pizzas or as a dipping sauce for bread or pepperoni rolls, this sauce perfectly compliments and adds a hint of heat and sweetness to your dish.

Servings: makes about 2 cups of sauce
Ingredients
- 1 Tbsp olive oil 
- 4 cloves garlic 
- 1 sprig Basil 
- 1 sprig Oregano 
- 1 sprig rosemary 
- ½ tsp red pepper flakes 
- 6 oz tomato paste 
- 28 oz crushed tomatoes 
- 1 tsp garlic powder 
- Pinch of sugar 
- 1 Tbsp balsamic vinegar 
- Salt, to taste 
Steps
- Prepare your herbs by separating the oregano and basil leaves from the stems. Chop leaves finely and set aside. 
- Heat the olive oil over medium-low heat for a minute or so, until shiny and fragrant. 
- Add the garlic cloves, rosemary, and red pepper flakes (if desired) and cook over medium-low heat for 3 minutes. 
- Pull out the rosemary and add the tomato paste, oregano stem, and basil stem and cook on medium heat for 5 minutes. 
- Add tomatoes. Stir to incorporate. 
- Add the garlic powder, sugar, and balsamic vinegar. Mix well, then allow it to come to a bubble. 
- Lower to medium-low and simmer for 20 minutes. 
- Pull out the herb stems and put in the leaves (oregano and basil). Salt to taste.
