Pizza Sauce
This pizza sauce is a blast of umami. Whether using it on pizzas or as a dipping sauce for bread or pepperoni rolls, this sauce perfectly compliments and adds a hint of heat and sweetness to your dish.

Servings: makes about 2 cups of sauce
Ingredients
1 Tbsp olive oil
4 cloves garlic
1 sprig Basil
1 sprig Oregano
1 sprig rosemary
½ tsp red pepper flakes
6 oz tomato paste
28 oz crushed tomatoes
1 tsp garlic powder
Pinch of sugar
1 Tbsp balsamic vinegar
Salt, to taste
Steps
Prepare your herbs by separating the oregano and basil leaves from the stems. Chop leaves finely and set aside.
Heat the olive oil over medium-low heat for a minute or so, until shiny and fragrant.
Add the garlic cloves, rosemary, and red pepper flakes (if desired) and cook over medium-low heat for 3 minutes.
Pull out the rosemary and add the tomato paste, oregano stem, and basil stem and cook on medium heat for 5 minutes.
Add tomatoes. Stir to incorporate.
Add the garlic powder, sugar, and balsamic vinegar. Mix well, then allow it to come to a bubble.
Lower to medium-low and simmer for 20 minutes.
Pull out the herb stems and put in the leaves (oregano and basil). Salt to taste.
